Before I get down to the good stuff - the new kitchen creation I can't wait to share with you - I promised to tell you a bit about last weekend's Portland Vegfest where I had the honor of sharing the stage with so many plant-based luminaries! There you'll see snapshots from presentations, book events, meetups with friends and
plant-powered superstars such as Victoria Moran, Susan Levin, and Dr. John McDougall. Susan Levin is the RD who did the nutrition review for the Fit Quickies book. And though Susan and I have known each other quite awhile via correspondence and working together, this is the first time we were able to meet and I was especially excited that
Susan was presenting at the weekend events in Portland. Here we are in the hotel lobby on the very first day of festivities (photo right).
It was another chance to share the stage with my friends Chef Aj, John Pierre, Hans Diehl, Brenda Davis, R.D., and Miyoko Schinner (who creates delectable artisan veg non-dairy cheese!) The pictures say it all, so click on over to the gallery http://tinyurl.com/lafon4n
Sweet Bean Cream
Now, for my new recipe!
As a big fan of breakfast and a big fan of the bean, I have long aspired to figure out how to make the two meet in my kitchen.
Beans at breakfast always seem to work when I'm in Mexico - must be the
chilaquilles experience that is such a good match for the sun, the surf, the palapa.
But somehow black beans and tortillas haven't made the transfer back to my home far north of the border here in Northern California. I finally found the answer in this simple preparation - Sweet Bean Cream - that I've become quite fond of to fulfill my desire for beans early on - AND in a tasty fashion! Spoon it onto your breakfast biscuits, or fold into a steamy bowl of grains. I hope you like it as much as I do!
