There is a new no-cost Plant-Based Summit that I wanted you to know all about. It features several of my friends and colleagues including Victoria Moran, Ellen Jaffe Jones, Joel Kahn, and more,
along with yours truly.
This summit is organized by Wendla Cook. Wendla ia a caregiver and career professional always on the go. She understands how hard it can be to prepare healthy and delicious plant based meals every day for one person and for a family.
Wendla told me she
began transitioning to a plant based diet three (3) years ago to stay healthy because she would no longer have health insurance and a job. The process was fairly easy because she had unlimited free time to prepare lavish, delicious, plan based meals (with 10 to 15 ingredients) daily, make smoothies every morning (sometimes twice a day), visit the supermarket four to five times a week. Eating a plant based diet made Wendla feel great, look great, and drop excess
weight.
However, Wendla tells me that after a year she went back to work, taking a sales job that required her to be on the road daily. She found it impossible to maintain a plant based diet in the manner she had become accustom to. Processed food became her go-to meal on the road, because there was not time to cook. Wendla says she became sluggish, developed mood swings, and started
gaining weight. She says she felt awful and decided something had to change, she was determined to find a way to transition back to a plant-based diet to accommodate her bus y schedule.
This inspired Wendla to organize and host this interview series all
around this topic, which was born out of her own research project to learn HOW to transition and maintain a plant-based diet when you are very busy and on the go.
