Here's a snapshot of the trial run of Country Comfort Cornbread biscuits that I've promised to bring for show-and-tell on Good Morning Sacramento (CBS) in Sacramento this Thursday!

The producer heard about The Plant-Based Journey and asked me to come by the show to demonstrate some of my tips for fast ways to plantify your plate (pg. 74 - 81 in Journey).

Um, yes, I can do that!  We only have 3 minutes or so for the segment, so this is not a big cooking demo (thank goonness!) so I'm coming with prepared items and ingredients for a quick show-tell about how to quickly up the plant content on your plate.

And as Country Comfort Cornbread (pg. 194) is so popular, I figured I'd embellish what is already in the recipe - whole kernels of corn - with even more plant color.  Chop red and green bell peppers and add to the batter with the corn and you have instant Fiesta Muffins!  

Though I usually cook cornbread in a pan, I thought 'muffins style' might be easier to handle on the set. What do you think?

With countdown to official launch of Journey, it's been an absolute delight to connect with a full lineup of radio hosts, podcasters, and other media all this week - which continues on into September.  In case you missed it, here is the conversation I had earlier this week with Victoria Moran on Unity Radio.  

If you are a member over at Engine2 Extra, then we met up in the LIVE chat over at E2X earlier this week.  All week Journey (and several of her recipes) was featured on the Cooking Channel at Vegan Mainstream - so great to meet up with many there! Tuesday I'll be on Juice Guru Radio at 3:00.

Early Reviews and Have You Heard About the Templates?

Speaking of easy ways to get in more plants, the response to the Recipe Templates in Journey has been very exciting!  Here's an example of how the Templates are going over from a review sent to my by Chrysta that I'd like to share with you:
